  • 1/2cauliflower, cut into small floret (3 cups)
  • 3/4 cupfrozen peas
  • 1red onion, chopped
  • 1small chilli, seeded, chopped
  • 2/3 cupplain flour
  • 3/4 tspgaram masala
  • 1/4 tspground turmeric
  • 2eggs, separated
  • 1/4 cupwater
  • 2 tbspvegetable oil
  • lime wedges, to serve
  1.  Bring a large saucepan of water to the boil. Add cauliflower and boil for 3 minutes. Add peas and cook for another 1-2 minutes. Drain and transfer to a large bowl. Mix in onion and chilli. Allow to cool.
  2.  Sift flour, garam masala and turmeric together. Add to cauliflower with beaten egg-yolks and water. Mix to a stiff batter and season to taste.
  3.   In a clean bowl, beat egg-whites until stiff peaks form. Lightly fold through cauliflower mixture.
  4.  Heat oil in a large frying pan on medium. Cook heaped tablespoonful of mixture in 3 batches, for 2-3 minutes each side, or until golden and cooked through. Drain on paper towel.
  5. Meanwhile, for raita, in a small bowl combine yoghurt with cucumber and garlic. Season to taste. Serve warm fritters with raita and lime wedges.

  • 1/2 c. plain yogurt
  • 2 cloves garlic, finely chopped
  • 1 (1-inch) piece ginger, peeled and grated
  • 1/2 tsp. curry powder
  • 1/4 tsp. ground cloves
  • 1 tbsp. grated lemon zest
  • 3 tbsp. lemon juice
  • kosher salt
  • Pepper
  • 1 lb. boneless, skinless chicken breasts, cut into 1 1/2 inch pieces
  • 1 c. couscous
  • 2 red peppers, cut into 1 1/2 inch pieces
  • 1 tbsp. oil, plus more for the grill
  • 1/4 c. fresh mint, roughly chopped
  • 2 oz. crumbled feta cheese (about 1/2 cup)


  1. In a large bowl, combine the yogurt, garlic, ginger, curry powder, ground cloves, lemon zest, 2 tablespoons lemon juice, and 1/2 teaspoon each salt and pepper. Add the chicken and let sit for 15 minutes.
  2. Place the couscous in a large bowl, add 1 1/4 cups hot water, cover and let sit for 15 minutes.
  3. Heat grill to medium-high. Thread the chicken and peppers onto skewers. Lightly oil the grill and cook the kebabs, turning occasionally, until cooked through, 8 to 10 minutes.
  4. Fluff the couscous with a fork and fold in the oil, the remaining tablespoon lemon juice, then the mint, and feta.

1-1/2 cups Oreo cookie crumbs

3 tablespoons butter, melted

4 packages (8 ounces each) cream cheese, softened

1 cup sugar

1-1/2 cups semisweet chocolate chips, melted and cooled

3 teaspoons vanilla extract

4 large eggs, lightly beaten

20 Oreo cookies, coarsely chopped


Preheat oven to 325°. In a large bowl, beat cream cheese and sugar until smooth. Beat in chocolate and vanilla. Add eggs; beat on low speed just until combined. Fold in half of the chopped cookies. Pour over crust

Bake 50-60 minutes or until center is almost set and top appears dull. Cool on a wire rack 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 . Sprinkle with remaining cookies. Place pan on a baking sheet. In a small bowl, combine cookie crumbs and butter. Press onto the bottom of a greased 9-in. spring form pan. Refrigerate In while preparing hour longer. Refrigerate overnight. Remove side of pan.

  • 1 pound semisweet chocolate, chopped
  • 2 cups all-purpose flour
  • 1/2 cup Dutch process cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 10 tablespoons unsalted butter
  • 1 1/2 cups packed brown sugar
  • 1/2 cup white sugar
  • 4 eggs
  • 2 teaspoons instant coffee granules
  • 2 teaspoons vanilla extract


  1. Melt chocolate over a double boiler or in the microwave, stirring occasionally until smooth. Sift together flour, cocoa, baking powder, and salt; set aside.
  2. In a medium bowl, cream butter with white sugar and brown sugar until smooth. Beat in eggs one at a time, then stir in coffee crystals and vanilla until well blended. Stir in melted chocolate. Using a wooden spoon, stir in the dry ingredients just until everything comes together. Cover, and let stand for 35 minutes so the chocolate can set up.
  3. Preheat the oven to 350 degrees F (175 degrees C). Line two cookie sheets with parchment paper. Roll dough into walnut sized balls, or drop by rounded table spoonful onto the prepared cookie sheets, leaving 2 inches between cookies.
  4. Bake for 8 to 10 minutes in the preheated oven. Cookies will be set, but the centers will still be very soft because of the chocolate. Allow cookies to cool on the baking sheets for 10 minutes before transferring to wire racks to cool completely.

Republic Day Special- Tri-Color Barfi

A simple recipe for an Indian sweet with colors to represent the Indian flag. Nothing is better then celebrating Republic day with a sweet dish that symbolizes our Flag color.



  • Cashewnuts – 250 gms
  • Almonds – 150 gms
  • Sugar – 750 gms
  • Ghee – 250 to 300 gms
  • Milk – 1 cup
  • Green Cardamom – 10 powdered
  • Saffron Powder – 1/4 tsp
  • Green Color Powder – 1/4 tsp
  • Orange or Red Color Powder – 1/4 tsp


  1. Soak cashews and almonds separately for half an hour.
  2. Drain and peel almonds.
  3. Grind the nuts together to form a thick paste.
  4. Add milk and sugar and grind again.
  5. Split the paste into three equal parts.
  6. Mix the red coloring to the first part.
  7. Add 1/3rd of the ghee and cardamom powder.
  8. Heat the paste in a pan and stir until it leaves the sides of the pan.
  9. Pour the paste into a ghee coated plate and spread well.
  10. Add half of the remaining ghee and cardamom powder to the second mix and repeat the same process. This paste will remain white in color.
  11. Pour the paste when done over the red paste and spread without mixing.
  12. Add green coloring, remaining ghee and cardamom powder to the third part.
  13. Prepare the paste with the same method and pour over the second layer.
  14. Spread it evenly.
  15. Garnish with chopped almonds and cashew and allow to cool.
  16. Once cooled, cut into square or diamond shaped pieces.

Republic Day Special- Tri Colored Pulao (Rangila Pulao)

Ready in: 15 to 30 mins


400g Kohinoor Basmati rice, washed, soaked in enough cold water to cover for 30 minutes and drained
2 tbsp sunflower oil
90g onion, finely sliced
2 cinnamon sticks
4 cloves
4 green cardamoms
salt to taste
a few drops of veggie red and green food coloring
1 tomato, sliced


  1. Heat the oil in a pan, add the onions, cinnamon sticks, cloves and green cardamoms. Sauté until the onions are golden.
  2. Add the drained rice and stir carefully, coating the rice grains with the oil.
  3. Add 960ml of hot water and the salt. Stir well and bring to the boil. Reduce the heat to low, cover the pan and cook until the water is absorbed and the rice is tender and fluffy.
  4. Remove the pan from the heat and take 120ml of cooked rice and mix with a couple of drops of the red food coloring. Take another 120ml of cooked rice and mix with a couple of drops of the green food coloring. Finally, arrange the three colors of rice in a bowl, using the carrot and tomato to decorate.
